Ramen in Gràcia: Ryu Ramen's seven broths and which to order
There's rich broth, creamy, light, spicy, meat-free and, in summer, cold. Here's what goes into each one, so you can choose before you sit down.

How to choose your broth before you order
If you want something hearty, go for the Tonkotsu, a thick pork-bone broth. The Paitan is gentler: slightly creamy, with chicken and vegetables. The clear ones are the Shio and the Shoyu, with chicken, pork and vegetables. For no meat, there's the Vegetariano, in a miso broth.

A slightly creamy broth made with chicken and vegetables.
Miso
Broth made with miso paste, chicken, pork and vegetables. Spicy option available.
Shio
A light salt-based broth with chicken, pork and vegetables.
Shoyu
A soy sauce-based broth with chicken, pork and vegetables.
Vegetariano
Fermented miso broth, suitable for vegetarians, mildly spicy.

Clear broths
Shio and Shoyu, the lighter broths
The Shio is made with salt and the Shoyu with soy sauce, both with chicken, pork and vegetables. They're the lightest choice if the Tonkotsu sounds like too much. The Shio also comes topped with fried onion, just like the Paitan.

Only in summer. The Ramen Frío is noodles with a sesame and soy sauce and a refreshing vinaigrette, and it's a vegan option. The rest of the year, you choose from the other six broths.
The Miso has a spicy option and the Vegetariano already comes mildly spicy. For any other broth, ask us when you order and we'll tell you what we can adjust.
Bamboo shoots, egg, spring onion, vegetables and chashu, except in the Vegetariano, which has no chashu. The Shio and Paitan add fried onion. If you want more, there's extra chashu, noodles or half an egg.
